Do Babaçu ao Prato: Pesquisadores Criam Alternativa ao Hambúrguer
A união entre conhecimentos científicos e tradicionais na Amazônia Maranhense resultou em dois novos produtos à base de plantas, que, além de aliarem nutrição, saúde e sustentabilidade, atendem a nichos de mercados crescentes por produtos naturais e ricos em proteína no Brasil. O análogo de hambúrguer de babaçu e a farinha de amêndoas abarcam ainda a marca da inovação tecnológica e social porque foram desenvolvidos em parceria entre cientistas e quebradeiras de coco da região. Essa sinergia de sucesso já havia dado origem a novas formulações de biscoito e de gelado, uma bebida tipo leite e a um análogo do queijo, todos oriundos do coco babaçu. Para o desenvolvimento desses coprodutos, participaram as mulheres da Cooperativa Mista da Agricultura Familiar e do Extrativismo do Babaçu – Coomavi, em Itapecuru-Mirim, da Associação Clube de Mães Quilombolas Lar de Maria, da comunidade Pedrinhas Clube de Mães em Anajatuba, MA, e ainda da Associação de Quebradeiras de Coco de Chapadinha do Assentamento Canto do Ferreira, em Chapadinha, MA. Como representantes da ciência, fizeram parte dos estudos pesquisadores da Embrapa Maranhão (MA), Embrapa Agroindústria Tropical (CE), Universidade Federal do Maranhão (UFMA) e Universidade Federal do Ceará (UFC), em parceria com a Rede ILPF e financiamento da Agência Alemã de Cooperação Internacional (GIZ) no Brasil. O objetivo foi a valorização do trabalho das quebradeiras de coco e do babaçu como produto da sociobiodiversidade brasileira com a diversificação dos coprodutos da palmeira para atender nichos de mercado. Para tal, o bagaço da amêndoa – até então resíduo da extração do óleo da amêndoa – foi transformada em farinha da amêndoa, matéria-prima para outros produtos, como o análogo do hambúrguer, e incluída em formulações de biscoitos, pães, bolos, mingaus e sorvetes, resultando em mais economia e satisfação dos consumidores. A pesquisadora Guilhermina Cayres, líder do projeto de pesquisa, diz que os novos alimentos foram desenvolvidos considerando as condições específicas das agroindústrias comunitárias e as práticas tradicionais das quebradeiras de coco, integrando melhorias e padronizações – incluindo as boas práticas de processamento e segurança alimentar – e levando em conta também a aceitação sensorial do produto, agregação de valor às amêndoas quebradas e diversificação de produção. “Promovemos a interação de conhecimentos técnicos e tradicionais para aumentar o valor agregado da produção artesanal e ocupar nichos de mercado específicos, como os de produtos associados à identidade sociocultural e os voltados para dietas com restrição de consumo de glúten e lactose. Sabemos que os alimentos oriundos do babaçu são elementos potenciais para criar sistemas alimentares que valorizam a identidade sociocultural de povos e comunidades tradicionais do Maranhão, gerando inclusão produtiva e riqueza com baixo impacto ambiental e inserindo o estado como referência na bioeconomia e no uso sustentável de produtos da sociobiodiversidade”, destaca a pesquisadora. Saberes tradicionais e científicos embasaram o desenvolvimento dos produtos O professor Harvey Villa, do Departamento de Engenharia Química da UFMA, explica como foi o processo para se chegar ao alimento tipo hambúrguer. “Utilizamos metodologia inversa. Em vez de irmos primeiramente ao laboratório e depois levar o produto para a comunidade, partimos de uma avaliação das condições locais e do potencial das matérias-primas que elas têm, inclusive dos próprios resíduos, o que é muito importante porque a amêndoa do coco babaçu inicialmente é empregada para extração de óleo a frio e a quente. Essa torta, fruto do processo de prensagem, normalmente era usada como ração para animais e sabíamos que ainda tinha bastante conteúdo de lipídios, carboidratos, podendo ser utilizada como um tipo de farinha por meio de bom tratamento e processamento. A ideia era reaproveitar 100% do produto e obtivemos êxito. A farinha que está sendo utilizada para o hambúrguer não é a do mesocarpo, é da amêndoa, antes resíduo e agora, matéria-prima. Assim, adaptamos o processamento às condições reais das quebradeiras, sempre com o cuidado de atender às exigências delas, e facilitamos que a elaboração desses produtos seja de forma simples, mas microbiologicamente correta do ponto de vista higiênico-sanitário”, relata. Do ponto de vista físico-químico, a farinha da amêndoa – em comparação à do mesocarpo – tem uma boa proposta para a carne de hambúrguer, pois utiliza casca da banana como agente estruturante junto com a amêndoa para dar sabor e maciez ao fritar, e mais a farinha de arroz para dar a liga junto com os temperos, o que garante boa validade do ponto de vista de vida útil e qualidade nutricional para dieta vegana. Além disso, atingiu um percentual de proteína de 13,17% por 100g de produto, valor adequado para o tipo de alimento. O produto não tem conservantes e dura até seis meses congelado. Foram feitas quatro formulações e chegou-se a duas: uma com casca de banana e outra com polpa de jaca. Devido à maior disponibilidade e regularidade da banana ao longo do ano, o hambúrguer à base de amêndoa de babaçu e casca de banana foi a opção priorizada entre as quebradeiras de coco e a equipe técnica para prosseguir com os testes e análises. Segundo a professora da UFMA Yuko Ono, nutricionista e membro da equipe técnica, uma das características funcionais da casca de banana é a presença de inúmeros sítios ativos responsáveis pela absorção de metais, entre os quais se destaca o cobre, presente em muitos processos industriais, mas nocivo à saúde humana quando em alta concentração. “Além disso, a casca da banana apresenta também teores de nutrientes maiores do que a polpa, como fibras, vitaminas, minerais e é rica em pectina. As fibras atuam na melhoria do trato gastrointestinal e no controle e prevenção de certas doenças crônico-degenerativas”, acrescenta Ono. Jefferson Marinho, bolsista do projeto, se envolveu diretamente na produção do hambúrguer e relembra o processo. “Partimos do zero, queríamos que o produto tivesse as características organolépticas mais similares possíveis às da carne, além de ingredientes específicos, como a farinha da amêndoa do babaçu, que é bastante rica nutricionalmente e energeticamente”, diz. Valorização das paisagens alimentares impulsiona turismo sustentável no Nordeste
Comunidades tradicionais de Alagoas, Pernambuco e Sergipe se reuniram esta semana, em Maceió, durante o workshop de governança turística sustentável do projeto Paisagens Alimentares, coordenado pela Embrapa Alimentos e Territórios, Financiado pelo Banco Interamericano de Desenvolvimento (BID), com foco no desenvolvimento do turismo de base comunitária, o projeto foi realizado a partir de 2022, buscando a valorização ambiental e social dos territórios selecionados. “As paisagens alimentares são espaços geográficos que contam a história do território, do ponto de vista da integração entre pessoas e saberes tradicionais, símbolos e significados, que fazer parte dos patrimônios cultural, agrícola, alimentar e ambiental”, explica o coordenador do projeto de inovação social, Aluísio Goulart. Segundo ele, “as paisagens alimentares evidenciam as funções paisagísticas, ambientais e sociais da agricultura, que podem ser compartilhadas por meio do turismo sustentável”. Para a secretária-executiva da Secretaria Estadual de Turismo (Setur), Marília Herrmann, houve uma mudança no perfil do turista após a pandemia, mais interessado em conhecer o modo de vida das pessoas visitadas. Ela destacou as ações do governo de Alagoas para apoiar as comunidades, incentivando o turismo gastronômico e sustentável de base comunitária. “Estamos fazendo um trabalho conjunto com as secretarias de Desenvolvimento e da Agricultura para inserir os produtos rurais e agrícolas nos hotéis e restaurantes e fomentar esse turismo de experiência”, afirmou. Manuela Lourenço, superintendente de Políticas para a Igualdade Racial, da Secretaria Estadual da Mulher e dos Direitos Humanos (Semudh), defende que é importante refletir sobre os desafios na valorização dos territórios. Um deles é a monocultura presente na região, como a da cana-de-açúcar, num contraste com a diversidade da produção agrícola apresentada pelas comunidades durante o evento. Ela ressaltou a necessidade de se ampliar as parcerias com o governo, a Embrapa e os povos tradicionais, para fortalecer esse processo de valorização dos saberes tradicionais. Sobre as ações desenvolvidas pela Embrapa, João Flávio Veloso Silva, chefe-geral da Embrapa Alimentos e Territórios, falou sobre o foco em valorizar a cultura alimentar, numa abordagem nova na história da Empresa. “Vocês estão nos ajudando a construir conceitos e referências que serão fundamentais para a atuação da Embrapa do futuro”, enfatizou. Veloso ainda salientou a importância da manutenção da Rede Territórios de Saberes e Sabores, criada pelas comunidades nordestinas em 2024. Riquezas alimentares e culturais Representantes dos territórios integrantes do projeto expuseram suas histórias e produtos. Anatalia Neta, Joaninha dos Santos e Vanessa dos Santos representaram os Povoados de Pontal, Preguiça e Terra Caída, em Indiaroba (SE). Vanessa falou com orgulho do ofício das catadoras de mangaba, Patrimônio Cultural Imaterial de Sergipe, e das práticas ancestrais das marisqueiras, além das riquezas alimentares e culturais da região. Também abordou a variedade de produtos e receitas à base de mangaba e de aratu, alimentos típicos locais. O território de São Cristóvão (SE) foi representado por Maria Reis, Simone de Souza, Vânia Fontes e Vera Maria Gomes. Vânia destacou a mandioca, o coco e o açúcar como os principais ingredientes da cultura alimentar. Os biscoitos bricelets e as queijadas lá produzidos também são patrimônios imateriais sergipanos, reconhecidos pelo modo de fazer transmitido por gerações. As comunidades ainda se dedicam ao artesanato, com o reaproveitamento de materiais, contribuindo para a preservação do meio ambiente. As ações desenvolvidas no Assentamento Nova Esperança, em Olho d’Água do Casado (AL), foram ressaltadas por Ana Paula Ferreira. Entre elas, houve diversas oficinas de capacitação, como a de economia criativa, oferecida pelo Instituto do Patrimônio Histórico e Artístico Nacional (Iphan), que incentivou a produção de artesanato com motivos rupestres. Os trabalhos de educação ambiental e a criação de mapas temáticos relativos à biodiversidade da caatinga também foram apontados como exemplos de reconhecimento e valorização das práticas tradicionais. Salete Barbosa, da Cooperativa Mista de Produção e Comercialização Camponesa (Coopcam), em Palmeira dos Índios (AL), lembrou que as conversas com a Embrapa começaram em 2018. Com consultorias do Sebrae e apoio de outras Unidades, como a Embrapa Semiárido, os cooperados estão aperfeiçoando os processos de produção, especialmente dos derivados de jabuticaba, e diversificando seus produtos. As capacitações os levaram a “descobrir muitas outras coisas no território”, segundo ela. Com isso, os agricultores já estão pensando em inovar os roteiros turísticos, beneficiar novos produtos e expandir os trabalhos com sementes crioulas. A Associação das Marisqueiras de Sirinhaém (Amas), representada por Cícero Silva, Eliane Silva e Viviane Wanderley, localiza-se na Área de Proteção Ambiental Guadalupe, em Sirinhaém (PE). As marisqueiras são guardiãs dos saberes e fazeres tradicionais da pesca artesanal. Lá os turistas têm a oportunidade de vivenciar as experiências de adentrar o manguezal para coleta de crustáceos, especialmente o aratu, além de provar as delícias culinárias preparadas por essas mulheres, como os típicos caldinhos de aratu e sururu. Também localizada na APA Guadalupe, a Associação da Comunidade Quilombola do Engenho Siqueira (Acqes), reconhecida como Patrimônio Cultural Imaterial de Rio Formoso (PE), agora consegue ter mais acesso a políticas públicas para alimentação. A Acqes, representada por Amara Magaly da Silva, Cláudio Pageú e Rodney da Silva, está oferecendo alimentos agroecológicos para a merenda escolar, por meio do Programa de Aquisição de Alimentos (PAA). Além disso, está conseguindo participar de editais de projetos voltados para o turismo de base comunitária. “Essa parceria foi além do projeto; ela trouxe outros complementos que fortalecem ainda mais a nossa comunidade”, disse Pageú. Sabores, Saberes e Governança Turística A programação contou ainda com a palestra Conexões entre Sabores, Saberes e os Territórios, proferida por Isabela Barbosa, professora da Uninassau. Turismo em Paisagens Alimentares foi o tema da apresentação de Richard Alves, da empresa Lab Turismo, que atuou no projeto. Governança e a Rede Territórios dos Saberes e Sabores foram abordados pelo professor Carlos Costa, da Universidade Federal de Alagoas (Ufal), instituição parceira do projeto, e por Lydayanne Nobre, bolsista da Fundação de Apoio à Pesquisa e ao Desenvolvimento (Faped). Durante o workshop, Aluísio Goulart também expôs os pilares de um modelo de Governança Sustentável em Paisagens Alimentares.
